Buongiorno. Meet Nina.

A Columbus, OH native, Nina entered the culinary industry to find better alternatives to gluten-free foods. Nina received a family-wide diagnosis of Celiac Disease in 2017 and began baking in the home to develop better-tasting gluten-free food options for her family.

Nina received a Bachelor of Arts in Public Policy from The Ohio State University, where she spent time training under Geri Peacock, owner of Cherbourg Bakery, in gluten-free, dye-free, and nut-free baking. Nina has also trained under Executive Chef Jacob Kuchan with Aubergine Private Dining Club in Italian and Modernist cuisine. In 2020, Nina began teaching gluten-free cooking classes, consulting with chefs, bakers, and caterers on allergen-safe food options, and working as a personal chef for clients with a variety of dietary restrictions around the Columbus and Cleveland areas.

Nina currently resides in White Sulphur Springs, West Virginia, where she cooks in the Main Dining Room of The Greenbrier. As a member of the team at The Greenbrier, Nina also develops gluten-free and allergen-safe food options for guests from around the world. Nina also provides personal chef services, cooking classes, and restaurant consulting to the Ohio, West Virginia, and Virginia areas.

Nina teaches her students the science, the fundamentals, and the techniques behind gluten-free cooking and baking, so that they have the proper knowledge to prepare great food options with any recipe.
